Hearty Braised Pork Ribs (Galbi Jjim) for the Whole Family

Main Ingredients

  • 2kg Pork ribs (cleaned and trimmed)
  • 1/3 Daikon radish (cut into large pieces)
  • 1 Carrot (cut into large pieces)

Special Marinade

  • 1 cup Soy sauce
  • 1/2 cup Mirin (or cooking wine)
  • 2 medium Onions
  • 1/2 Apple (seeds removed)
  • 1 tsp Black pepper powder
  • 2 Tbsp Minced garlic
  • 1/2 cup Chopped scallions (green part)
  • 3 Tbsp Sesame oil
  • 1/2 cup Oligodang (corn syrup) (sweetness adjustable)
  • 2 Tbsp Toasted sesame seeds (for garnish)
  • 1/2 Tbsp Ginger syrup (or ginger juice) (to remove gamey smell & enhance flavor)

Cooking Instructions

Step 1

First, rinse the pork ribs thoroughly under cold running water. Removing the blood is key to a tender and less gamey galbi jjim. Place the ribs in a bowl, cover with cold water, and let them soak for about 3 hours to remove blood. Changing the water halfway through is recommended.

This is the first parboiling step to remove any remaining gamey odor. Place the pork ribs in a pot and add enough water to cover them. Add 1/2 cup of rice wine (or soju), a few slices of ginger, 2-3 bay leaves, and 1 tsp of coffee grounds (optional). Bring to a boil over high heat, then reduce to medium heat and simmer for about 5-10 minutes. After parboiling, rinse the ribs and the pot thoroughly. It’s also a good idea to clean the pot. At this stage, use scissors to trim off any excess fat attached to the ribs for a leaner dish.

Prepare the vegetables to be added to the braised ribs. Cut the daikon radish into large, bite-sized pieces and round off the sharp corners. Do the same for the carrot. Slice the king oyster mushrooms into manageable pieces.

Let’s make the base for our delicious galbi jjim marinade. In a blender, add the 2 onions (roughly chopped), the 1/2 apple (you can use it with the peel after removing the seeds), and any leftover scraps from cutting the daikon and carrot.

Add a little water to the blender with the ingredients and blend until very smooth. This step helps the marinade penetrate the meat and creates a thicker, richer sauce.

To the blended vegetable and apple base, add the remaining marinade ingredients. Include 2 Tbsp minced garlic, 1/2 cup chopped scallions, 1/2 Tbsp ginger syrup (or juice), and 1 tsp black pepper powder.

Now, add the liquid seasonings that will provide sweetness and umami. Mix in 1 cup of soy sauce, 1/2 cup of mirin, and 1/2 cup of oligodang (or substitute with sugar or corn syrup; adjust sweetness to your preference). Whisk everything together until well combined to create the marinade.

Place the cleaned and parboiled pork ribs into the pot. Pour the blended vegetable and apple mixture over the ribs, ensuring they are evenly coated. Mix well.

Arrange the prepared daikon radish, carrots, and king oyster mushrooms from step 2 over the ribs. The natural sweetness and aroma from these vegetables will further enhance the flavor of the galbi jjim.

Now, cover the pot and begin the braising process. Start on high heat until it boils, then reduce to medium heat. Cover and simmer for about 40 minutes to 1 hour, or until the ribs, radish, and carrots are very tender. Stir occasionally to prevent sticking and skim off any excess fat that rises to the surface for a cleaner taste. If the sauce becomes too thick, you can add a little water. The dish is ready when the meat and vegetables are completely tender.

Transfer the perfectly braised pork ribs to a serving dish. Sprinkle with 2 Tbsp of toasted sesame seeds for a final touch. Your delicious and hearty galbi jjim, loved by the whole family, is now complete! Enjoy it with a warm bowl of rice.
