Main Ingredients

  • 2 medium potatoes

Seasoning

  • 3 Tbsp soy sauce
  • 2 Tbsp sugar
  • 3 Tbsp cooking oil
  • 1/4 tsp black pepper
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sesame seeds
  • 15ml (1 Tbsp) sesame oil

Cooking Instructions

Step 1

First, thoroughly wash and peel the 2 medium potatoes. Then, cut them into bite-sized cubes, similar to ‘kkakdugi’ (Korean radish kimchi). The size of the cubes is flexible; you can cut them slightly smaller or larger based on your preference, and it won’t significantly impact the taste.

Step 1

Step 2

The secret to delicious braised potatoes lies in the sauce! In a bowl, combine 3 Tbsp of soy sauce, 2 Tbsp of sugar, 1/4 tsp of black pepper, 1 Tbsp of minced garlic, and 3 Tbsp of cooking oil. Mix these ingredients well to create a flavorful sauce.

Step 2

Step 3

Now, prepare a non-stick or well-seasoned pan. Add the cubed potatoes to the pan, followed by all the prepared sauce. Next, carefully pour in enough water to just cover the potatoes. Gently mix everything together so the ingredients and sauce are evenly distributed. Be careful not to stir too vigorously at this stage.

Step 3

Step 4

Place the pan over high heat and bring the mixture to a rolling boil. Here’s a crucial tip: Do NOT stir the potatoes during this stage. This prevents them from breaking apart or sticking to the bottom of the pan, and it helps the sauce penetrate evenly.

Step 4

Step 5

Once boiling, reduce the heat to medium and let it simmer until the liquid has reduced to a thick, glaze-like consistency, as shown in the picture. Continue to resist the urge to stir! This is the critical time for the potatoes to become tender and absorb the delicious flavors. Patience is key here.

Step 5

Step 6

When the sauce has reached your desired thickness, just before turning off the heat, add 1/2 Tbsp of sesame seeds and 15ml (1 Tbsp) of sesame oil. Give it a gentle mix to incorporate. This will add a nutty aroma and a beautiful sheen to your braised potatoes. Your delicious braised potatoes are ready to enjoy!
