There’s someone in my house who absolutely adores corn! They can’t resist it, even waking up from a deep sleep for it. This summer, we must have steamed an unbelievable amount of corn. However, sometimes we encounter corn that isn’t quite up to par. Those kernels often get overlooked. I gather those leftover corn kernels and make a comforting corn porridge using leftover rice. It’s a fantastic dish for a solo meal! The delightful pop of the corn kernels adds a wonderful texture and enhances the flavor.

  • 2/3 bowl of cooked leftover rice
  • A small amount of corn kernels (separated from steamed or boiled corn)
  • A small amount of miscellaneous leftover vegetables (e.g., water spinach, chives, spinach)
  • 2 Tbsp perilla seed powder

  • 1/2 Tbsp soup soy sauce (guk-ganjang)
