  • Somyeon noodles (appropriate amount, refer to the yellow circle on the package for 1 serving)
  • 1/2 cucumber
  • 1/3 carrot

Spicy & Sweet Bibim Sauce

  • 2 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy Sauce (Guk-ganjang)
  • 1 Tbsp Maesilcheong (Plum Syrup) (enhances sweetness and umami!)
  • 1 Tbsp Gochugaru (Korean chili flakes) (adjust to your spice preference)

First, prepare the kimchi. Finely chop the kimchi into strips about 1cm wide. This helps it blend well with the noodles. Using kimchi with a good amount of sauce will make it even tastier.

The key to delicious Bibim Guksu! Make the bibim sauce in advance. In a bowl, combine 2 tablespoons of gochujang, 2 tablespoons of soy sauce, 1 tablespoon of maesilcheong, and 1 tablespoon of gochugaru. Mix them thoroughly with a spoon. The maesilcheong adds a delightful sweet and sour flavor.

Wash the cucumber and carrot, trim the ends, and then julienne them thinly. Thinner strips will absorb the sauce better and provide a nicer texture.

Now it’s time to cook the somyeon noodles. Fill a pot with plenty of water and bring it to a boil. Once boiling, add the somyeon noodles. The ‘yellow circle’ indicated on the noodle packaging usually represents a single serving, so you can use it as a guide for portioning.

Boil the noodles for about 4 minutes. To check if they are cooked, try taking out one strand and tasting it. Once cooked, immediately rinse the noodles thoroughly under cold running water to remove excess starch and make them firm and chewy.

After rinsing in cold water, drain the somyeon noodles well in a colander. It’s important to remove as much water as possible, as leftover water can dilute the sauce. You can gently squeeze them with your hands or let them sit for a moment to drain.

Place the drained somyeon noodles into a bowl. Add the prepared bibim sauce and the julienned cucumber and carrot. Now for the fun part – mixing! Use chopsticks or a spatula to gently toss the noodles, ensuring the sauce coats everything evenly without breaking the noodles.
