How to Make Delicious Kimchi and Bean Sprout Soup at Home
Today, we’ve prepared a Kimchi and Bean Sprout Soup that will refresh your insides and clear your mind! The savory kimchi and crisp bean sprouts create a wonderful flavor, perfect for a hangover cure or a hearty meal.
Main Ingredients- 1 cup fermented kimchi, chopped into bite-sized pieces
- 2 handfuls fresh bean sprouts, rinsed thoroughly
- 300g soft tofu, cubed
- 1/2 stalk green onion, thinly sliced
- 2L anchovy broth (best to prepare in advance)
Seasoning- 1/2 cup kimchi juice
- 2 Tbsp salted shrimp, minced
- 1 Tbsp minced garlic
- Pinch of black pepper
- 1/2 cup kimchi juice

Cooking Instructions
Step 1
First, bring 2L of anchovy broth to a boil in a pot. While the broth is heating up, chop the kimchi into bite-sized pieces, cube the tofu, and thinly slice the green onion.

Rinse the bean sprouts thoroughly under running water to remove any impurities and drain them well. This step is crucial for a fresh and clean-tasting soup without any unpleasant bean sprout smell.

Once the prepared anchovy broth is boiling vigorously,

add the chopped kimchi (1 cup),

the well-rinsed bean sprouts (2 handfuls),

and the kimchi juice (1/2 cup). Once it comes to a boil again, continue to simmer for 5 minutes over high heat to allow the flavors of the kimchi and bean sprouts to meld.

Next, add the cubed tofu (300g),

the minced salted shrimp (2 Tbsp) for added umami,

and the minced garlic (1 Tbsp) for aroma. Bring back to a boil, then reduce to low heat.
