Main Ingredients

  • 4 leaves of baby Napa cabbage
  • 1 potato
  • 1/2 zucchini
  • A little bit of green onion
  • 1/2 onion
  • 1/3 green chili pepper
  • 1/3 red chili pepper
  • 1 Tbsp red pepper powder (gochugaru)

Seasoning

  • 3 Tbsp soybean paste (doenjang)
  • 1/2 Tbsp red pepper paste (gochujang)
  • 2 Tbsp minced garlic

Cooking Instructions

Step 1

First, prepare the vegetables that will give the soup a refreshing flavor. Peel the potato and zucchini, then cut them into bite-sized pieces. Finely chop the green onion and thinly slice the onion. Slice the green and red chili peppers diagonally, removing the seeds. Cut the baby Napa cabbage into manageable pieces.

Step 1

Step 2

The first step to making a delicious soup is to prepare the broth. Fill a pot with water and add a broth sachet (or anchovies, kelp, etc.) and bring it to a rolling boil to create a savory broth. (You can also use store-bought broth or plain water.)

Step 2

Step 3

Once the broth has simmered and the ingredients have infused their flavor, remove the broth sachet. Dissolve 3 Tbsp of doenjang, 1/2 Tbsp of gochujang, and 2 Tbsp of minced garlic into the broth. Stir well to combine the seasonings. Bring the soup to a boil again, then add the potatoes and zucchini first, letting them cook until tender.

Step 3

Step 4

Check if the potatoes are cooked through. Once they are tender, add the prepared baby Napa cabbage to the pot. Allow the white parts of the cabbage to soften and cook.

Step 4

Step 5

When the white parts of the cabbage have become translucent and tender, add the sliced onion, green onion, green chili pepper, and red chili pepper. Simmer for a short while longer. Finally, add 1 Tbsp of red pepper powder for a touch of spiciness. Continue to simmer gently over low heat until all the ingredients are well combined. Your delicious Napa Cabbage Doenjang Soup is ready! Enjoy it while it’s hot.
