LA Galbi BBQ Ingredients

  • LA Galbi (as needed)
  • 2.5 cups Soy Sauce
  • 5 Tbsp Brown Sugar
  • 1 piece Ginger (minced or grated)
  • 1 Onion (grated)
  • 1/2 Pear (grated)
  • 1/2 Apple (grated)
  • 2 Tbsp Minced Garlic
  • Pinch of Black Pepper
  • 2 Tbsp Cooking Wine (Mirin or Sake)
  • Scallions (chopped)

Cooking Instructions

First, prepare the fresh LA Galbi. Since LA Galbi can have bone fragments from the cutting process, it’s essential to rinse it thoroughly under running water. After this initial wash, soak the LA Galbi in cold water to remove excess blood. While typically soaked for 2 hours, expert advice suggests that prolonged soaking can lead to loss of juices. Therefore, it’s recommended to soak it for about 30 minutes to an hour. Changing the water once or twice during soaking will further enhance the quality.

Now it’s time to marinate the LA Galbi after removing the blood. The marinade is key! While a sweet and salty flavor is important, using natural sweeteners from fruits and vegetables like onions, apples, and pears not only tenderizes the meat but also removes any gamey odor, resulting in a much richer flavor. For this guest-worthy dish, I added extra effort. Originally, I intended to juice the blended fruits and vegetables, but due to time constraints, I used the pulp as well. If you prefer a cleaner marinade that won’t burn easily, it’s best to strain the blended mixture through a cheesecloth to extract only the juice.

Let’s make the marinade. Measure and add soy sauce, brown sugar, and minced garlic. Sprinkle in some black pepper. Add the grated onion, pear, apple, and ginger, along with 2 tablespoons of cooking wine. Mix all the ingredients thoroughly to create the marinade. Submerge the blood-removed LA Galbi completely in this marinade. Marinating it overnight will allow it to be ready for grilling first thing in the morning. My mother-in-law mentioned that using brown sugar gives a prettier color, which is a helpful tip.

Chop the scallions finely and mix them into the marinade. This addition of scallions will enhance the marinade with their fresh aroma, making the flavor even more complex. Pour the prepared marinade over the LA Galbi, from which the blood has been sufficiently removed, and mix well to ensure even coating.

Transfer the marinated LA Galbi to an airtight container and let it age in the refrigerator. If you marinate it overnight, the flavors will deeply penetrate the meat by lunchtime the next day, resulting in incredibly delicious LA Galbi. You can already smell the deliciousness!

The LA Galbi purchased that day cost about 70,000 won, but it filled two large containers generously. This allowed us not only to entertain guests but also for my husband, children, and even my nephews to enjoy it abundantly. Eating out would have been significantly more expensive, so making it at home was much more economical and satisfying.

Shall we grill the LA Galbi now? I believe gas stovetop grilling yields the best results compared to induction, so I moved to the gas burner. Our kitchen is equipped with an induction cooktop, a radiant cooktop, and two gas burners on the balcony, which are very useful for cooking meats or frying. Grilling over high heat until slightly charred creates a crispy exterior and a juicy interior – the perfect LA Galbi. Early in the morning, rubbing my sleepy eyes, I grill LA Galbi for my husband. This moment of cooking for his happiness is truly my joy.
