- A little chopped green onion
- 2 Tbsp flour
- 2 cups water
- 2 Tbsp cooking oil
- Cooked rice, appropriate amount
Braising Sauce Ingredients- 10 Tbsp soy sauce (jin-ganjang)
- 4 Tbsp mirin
- 4 Tbsp cooking sake (cheongju)
- 3 Tbsp sugar
- 2 cups water
- 10 Tbsp soy sauce (jin-ganjang)
- 4 Tbsp mirin
- 4 Tbsp cooking sake (cheongju)
- 3 Tbsp sugar
- 2 cups water
Cooking Instructions
Step 1
First, let’s prepare the flour water to wash and prepare the sea mustard. In a bowl, pour 2 cups of water and dissolve 2 tablespoons of flour completely, ensuring there are no lumps.
Step 2
Now, let’s prepare the sea mustard for the bibimbap. Trim off the feathery branches from the main stems and cut the remaining stems into bite-sized pieces, about 2-3 cm long. If they’re too long, it can be difficult to eat in a bibimbap.
Step 3
Place the prepared sea mustard into the flour water you just made and gently knead it. This process effectively removes any sand or impurities hidden within the sea mustard. After kneading, rinse it thoroughly under running water 3-4 times. This step also helps to mellow out the distinct sea flavor and ensures a cleaner taste.
Step 4
It’s time to make the delicious braising sauce for the sea mustard. In a separate bowl, combine 10 tablespoons of soy sauce, 4 tablespoons of mirin, 4 tablespoons of cooking sake, 3 tablespoons of sugar, and 2 cups of water. Stir well until the sugar is completely dissolved. Having the sauce pre-mixed will make the cooking process much smoother.
Step 5
Slice the fried tofu (aburaage) into bite-sized pieces. Cutting them into manageable sizes will ensure they blend well with the rice in the bibimbap.
Step 6
Julienne the carrot into thin strips, similar in length to the prepared sea mustard. This will add a lovely color and a pleasant texture to the dish.
Step 7
Heat a pan over medium heat. Once the pan is warm, add 2 tablespoons of cooking oil and add the julienned carrots. Sauté the carrots until they become slightly translucent.
Step 8
Once the carrots are partially cooked, add the sliced fried tofu to the pan and sauté them together. The fried tofu will absorb the oil and add a rich, savory flavor.
Step 9
Now it’s time to add the sea mustard. Add the cleaned and prepared sea mustard to the pan with the carrots and fried tofu. Stir everything together and sauté for about 1-2 minutes, just until the sea mustard is slightly cooked.
Step 10
Pour all of the pre-made braising sauce over the sautéed ingredients. Now, let everything simmer and reduce until the sauce thickens and coats the ingredients beautifully.
Step 11
Simmer over medium-low heat until the sauce is reduced to about 4-5 tablespoons, leaving a thick, syrupy consistency. This indicates that the braised sea mustard is ready. Be sure to taste and adjust the seasoning as needed, as over-reducing can make it too salty.
Step 12
Finally, top a bowl of warm cooked rice generously with the prepared braised sea mustard. Garnish with finely chopped green onions to complete this flavorful and nutritious sea mustard bibimbap! For an extra touch, you can drizzle a little sesame oil before mixing and enjoying.
