Delicious Homemade Soy-Marinated Shrimp (Ganjang Saewoo Jang)

Even without fresh live shrimp, you can make incredibly tasty marinated shrimp using frozen ones. I’ll guide you through the preparation and marinating tips.
Main Ingredients- 25 Shrimp (medium size recommended)
- 5 cloves Garlic
- 2 Korean Green Chili Peppers (Cheongyang peppers)
- 1 Red Chili Pepper

Cooking Instructions
Step 1
First, prepare the aromatic ingredients that will enhance the flavor of your shrimp. Thinly slice the garlic cloves. Remove the stems from the green and red chili peppers and slice them thinly. If you prefer more heat, feel free to increase the amount of green chilies.

Now, let’s make the delicious soy marinade. In a pot, combine 100ml soy sauce, 200ml water, 100ml granulated sugar, 2 Tbsp mirin, and 1 Tbsp corn syrup. Bring it to a boil, then reduce the heat and let it simmer briefly. Once it boils, turn off the heat and let the marinade cool completely. It’s crucial for the marinade to cool down entirely to preserve the shrimp’s freshness and ensure proper marination.

While the soy marinade is cooling, focus on preparing the star of the dish: the shrimp. Choosing fresh, plump shrimp is key for the best texture and flavor.

For each shrimp, use a skewer to gently poke through the second segment (on the body) and carefully remove the dark intestinal vein. Removing the vein prevents any bitterness and results in a cleaner taste. Remove the heads, peel the shells leaving only the tail segment intact, then rinse the shrimp a couple of times under running water and pat them dry.

Arrange the dried shrimp neatly in a clean glass container, stacking them without overcrowding. Layering them evenly allows the marinade to penetrate uniformly, ensuring consistent flavor.

Evenly distribute the sliced garlic and chili peppers over the shrimp. The fragrant garlic and slightly spicy chilies will add another layer of complexity to the shrimp’s flavor.
Step 7
Finally, pour the completely cooled soy marinade over the shrimp and aromatics, ensuring they are fully submerged. Your soy-marinated shrimp is ready to be made! Cover the container and refrigerate for at least 5 hours, or preferably overnight, to let it marinate. Once done, you’ll enjoy delightfully chewy shrimp with a rich umami flavor. The longer it marinates, the deeper the taste will become.
