Yakshik Ingredients

  • 500g glutinous rice
  • Ginseng extract (or water) as needed
  • 1 Tbsp salt
  • 1/2 cup water
  • 8 peeled chestnuts
  • 8 red dates
  • 1 root ginseng (approx. 30g)
  • 1/2 cup nuts (walnuts, pine nuts, etc.)
  • 2 Tbsp cooking oil

Seasoning

  • 4 Tbsp sugar
  • 1 Tbsp honey

Cooking Instructions

Step 1

First, prepare 500g of glutinous rice. Rinse the rice thoroughly and soak it for at least 5 hours. You don’t need to drain it completely dry. Once soaked, place the glutinous rice in a sieve to drain for a little while.

Transfer the drained glutinous rice to a steamer or a bamboo steamer lined with cloth, and steam for 30 minutes until the steam has fully risen. It’s crucial to steam it sufficiently so the rice grains become translucent and achieve a chewy texture.

Let’s make the ginseng extract, the heart of our Yakshik! Take 1 root of cleanly prepared ginseng, add 1 Tbsp of salt and 1/2 cup of water to a blender, and blend until smooth. Strain the blended ginseng through a fine sieve to obtain a clear ginseng extract.

While the rice is steaming, gradually add the ginseng extract (made in step 2) to the steamed glutinous rice, 1 to 2 times. Gently stir with a spatula to ensure the rice evenly absorbs the color and aroma. Be careful not to mash the rice grains while mixing and adjusting the seasoning.

Prepare the ingredients for the Yakshik topping. Remove the seeds from the red dates and cut them into 6 equal pieces. Slice the peeled chestnuts into 6 equal pieces as well. Finely chop or thinly slice the prepared ginseng.

Transfer the steamed glutinous rice to a large bowl. Add the prepared chestnuts, red dates, ginseng, and the seasoning ingredients: 4 Tbsp sugar and 1 Tbsp honey. Using a spatula, gently mix everything together without crushing the rice grains until all ingredients are evenly combined. Let this mixture rest for about 30 minutes to allow the flavors to meld.

Return the rested Yakshik mixture to the steamer and steam for another 30 minutes. This second steaming process will make the glutinous rice even chewier and allow the flavors of the ginseng and other ingredients to deepen and integrate.

Once the Yakshik is fully steamed, let it cool slightly so it’s easier to handle, then transfer it to a large bowl. Add 2 Tbsp of cooking oil and mix gently with a spatula. This step prevents the Yakshik from sticking together and adds a lovely sheen. Coat the freshly steamed Yakshik with oil.
