Main Ingredients- 3 fresh abalones
- 3 cups water (approx. 600ml)
- 1 cup glutinous rice (approx. 180g)
- A small amount of dried seaweed (approx. 2-3g)
Seasoning & Flavoring- 2 Tbsp sesame oil
- 1/2 tsp salt (adjust to taste)
- 2 Tbsp sesame oil

Cooking Instructions
Step 1
It’s crucial to prepare the abalone cleanly. Use a brush or similar tool to scrub away any dirt from the shell, the meat, and between them. Pay special attention to removing the hard ‘teeth’ located at the front of the abalone’s underside; use a knife carefully to cut them away. Removing these ensures a better texture, as they can be unpleasant to bite into.
Step 2
Heat 1 tablespoon of sesame oil in a pot over medium heat. Add the prepared abalone and stir-fry for about 1 minute. Be cautious as the abalone’s innards may pop. Making a few shallow cuts on the abalone while stir-frying can help it cook more tenderly. This initial stir-frying enhances the abalone’s flavor.
Step 3
Add 1 cup of rinsed and soaked glutinous rice to the pot with the stir-fried abalone. Continue to sauté together for about 1-2 minutes. This step coats the rice grains in oil, preventing the porridge from clumping and adding a nutty flavor. Next, pour in 2 cups of water (approx. 400ml) and add the rehydrated dried seaweed. Cover the pot and simmer over medium heat for about 15 minutes, or until the glutinous rice has broken down.
Step 4
Once the glutinous rice has softened, add the remaining 1 cup of water (approx. 200ml). You can adjust the amount of water based on your desired porridge consistency. Reduce the heat to low and continue to simmer, partially uncovered, for another 10 minutes. It’s important to stir occasionally to prevent the porridge from sticking to the bottom of the pot. Finally, stir in the remaining 1 tablespoon of sesame oil and 1/2 teaspoon of salt to season. Feel free to add more salt or a dash of soy sauce to your preference. Serve warm for the best taste!
