- Mayonnaise (generous amount for richness)
- Salt (adjust to taste)
Cooking Instructions
Step 1
Prepare 14 slices of bread for the sandwiches. Thinly and evenly spread softened room-temperature butter on one side of each slice. This step prevents the bread from becoming soggy easily and adds a delicious buttery flavor.
Step 2
While you’re buttering the bread, hard-boil 10 eggs. Carefully place the eggs in boiling water and cook for about 12 minutes until fully cooked. After boiling, rinse the eggs under cold water to make peeling easier.
Step 3
Once the eggs are boiled and cooled slightly, peel them and place them in a bowl. Roughly mash the eggs with a fork, leaving some texture. Combine with mayonnaise and a pinch of salt. Mix well to create a creamy and flavorful egg filling. Don’t over-mash; a little texture is nice.
Step 4
Spread the prepared egg filling generously onto the buttered side of one slice of bread. Be careful not to overfill to the edges. Top with another slice of bread, butter-side down. Gently press down to secure the filling.
Step 5
Cut the sandwiches into desired portions, such as halves or quarters. Don’t discard the crusts! You can process them into breadcrumbs for cutlets or store them in the freezer for later use. Alternatively, you can bake the crusts as is to make delicious rusks. These egg sandwiches are ready to be enjoyed immediately or can be chilled in the refrigerator for a refreshing taste.
