Cooking Instructions
Step 1
First, prepare the Chamdeurim rice, which will be the foundation for this delicious rice bowl.
Step 2
Chamdeurim rice is top-quality rice, free from broken or black grains, appearing very clean, transparent, and lustrous. We’ll use this excellent Chamdeurim rice today to make a delicious beef brisket and seafood stir-fry rice bowl.
Step 3
Rinse the Chamdeurim rice thoroughly under running water and place it in your rice cooker. Discard the cloudy rinse water, keeping only the rice.
Step 4
Add water according to the amount of rice, as you normally would, and press the cook button on your rice cooker. Use the standard white rice cooking setting.
Step 5
Voila! Perfectly fluffy Chamdeurim rice is ready. Now, let’s make the beef brisket and seafood stir-fry to go with this delicious rice.
Step 6
Let’s prepare the ingredients. Cut the beef brisket into slightly smaller, bite-sized pieces. (Optional: If you have soaked dried seaweed, squeeze out excess water, chop it finely, and stir-fry it along for enhanced flavor and texture.) Finely chop the scallions. For the Cheongyang chili pepper, slice it in half, remove the seeds, and then mince it finely. Rinse the shrimp meat lightly under running water and pat dry. Prepare the cooked whelk and cooked sea snails. Ingredient preparation is complete!
Step 7
Now it’s time to make the sauce that will bring this rice bowl to life. Measure out the soy sauce, gochugaru, black pepper, oligodang, anchovy extract, and cooking wine into a bowl. Also, have your minced garlic ready.
Step 8
Let’s start stir-frying. Lightly grease a pan with oil, add the chopped scallions, and stir-fry over medium-low heat until fragrant. This process of releasing scallion oil will significantly deepen the dish’s aroma.
Step 9
Once the scallions are fragrant, add the beef brisket and stir-fry. When the beef is cooked and releases a savory aroma, prepare to add the next ingredients.
Step 10
When the beef is cooked, add the prepared shrimp meat and (if using) soaked seaweed, and stir-fry them together. The shrimp will turn pink as they cook; that means they’re almost done.
Step 11
Once the shrimp is fully cooked, it’s time to add all the pre-mixed seasoning and minced garlic.
Step 12
Stir well with a spatula to ensure the sauce coats all the ingredients evenly. Continue to stir-fry until the sauce is well incorporated. Be mindful of the heat to prevent the sauce from burning.
Step 13
As the stir-fry nears completion, add the finely chopped Cheongyang chili pepper and sesame seeds.
Step 14
Give it a final quick stir-fry, tossing everything together. The spiciness from the chili pepper and the nuttiness from the sesame seeds will add another layer of deliciousness.
Step 15
Spoon a generous serving of the prepared Chamdeurim rice into a bowl. Gently spread it out so it’s not clumped together – this helps with the texture.
Step 16
Pile the delicious beef brisket and seafood stir-fry generously on top of the rice. Carefully place a fresh egg yolk in the center to enhance both the appearance and the flavor. Finish with a sprinkle of sesame seeds for a stunning beef brisket and seafood stir-fry rice bowl. Enjoy!
Step 17
The plump shrimp, chewy whelk and sea snails, and savory beef brisket create a fantastic harmony with the sweet and spicy sauce and fresh seaweed. Mixing it all with the delicious Chamdeurim rice makes for an incredibly satisfying meal!
