Ingredients- 4 fresh abalones
- Plenty of olive oil
- 1 Tbsp minced garlic
- 2 pieces of butter
- 1 Tbsp basil salt (or regular salt)
- Chili flakes or finely chopped chili pepper to taste
Cooking Instructions
Step 1
First, it’s important to clean the abalone properly. Soak the abalone in cold water for at least 30 minutes. This helps to loosen and remove any dirt or grit from between the shell and the meat. Use a brush to scrub the shell and the area around the meat clean.

Carefully separate the abalone’s innards (stomach and digestive tract) from the meat. You can save the innards to make a delicious abalone porridge later! If you’re not using them right away, wash them thoroughly, store them in an airtight container, and freeze them for future use.

To prevent the oil from leaking out during cooking, line your air fryer basket with 2-3 layers of aluminum foil. Generously drizzle extra virgin olive oil over the foil. This will help create a rich, flavorful base, reminiscent of Spanish cuisine.

Place the cut abalone pieces on top of the oiled foil. Distribute the pieces of butter evenly over the abalone; as the butter melts, it will infuse the abalone with a wonderful savory flavor. Sprinkle with basil salt (or regular salt), minced garlic, and your desired amount of chili flakes or finely chopped chili pepper for an extra kick of flavor.

To keep the abalone moist and ensure even cooking, cover the top loosely with another piece of aluminum foil. If you prefer a crispier texture, you can remove the foil for the last 5 minutes of cooking.

Preheat your air fryer to 200°C (390°F). Place the foil-covered abalone inside and cook for approximately 18 to 20 minutes. It’s a good idea to check on the abalone halfway through to ensure it’s cooking evenly.
