  • Mayonnaise 4 Tbsp

Seasoning Ingredients

  • Gochujang (Korean chili paste) 2 Tbsp
  • Soy sauce 2-3 Tbsp
  • Gochugaru (Korean chili flakes) 2 Tbsp
  • Minced garlic 1 Tbsp
  • Oligodang (corn syrup) 3-4 Tbsp (adjust sweetness to taste)
  • Sugar a little
  • Cooking wine 1-2 Tbsp (or mirin)
  • Sesame oil 1 tsp
  • Sesame seeds a suitable amount

Cooking Instructions

First, prepare the dried shredded squid (jinmi-chae). If the squid strips are too long, cut them into bite-sized pieces. In a bowl, place the squid and add 4 tablespoons of mayonnaise. Gently mix and coat the squid strips with the mayonnaise. This helps the sauce adhere better and makes the squid more tender.

Now, let’s make the delicious seasoning sauce! In a small bowl, combine 2 Tbsp gochujang, 2-3 Tbsp soy sauce, 2 Tbsp gochugaru, 1 Tbsp minced garlic, 3-4 Tbsp oligodang, a little sugar, and 1-2 Tbsp cooking wine. Mix well to create the sauce. Adjust the sweetness by modifying the amount of oligodang or sugar according to your preference.

Prepare a wide pan (a Wok or ‘gungjung-pan’ is recommended). Pour the prepared seasoning sauce into the pan. Cook over medium-low heat until the sauce comes to a gentle boil. Once the sauce thickens slightly and becomes fragrant, turn off the heat.
