Now it’s time to remove the scales. Starting from the tail end and working towards the head, use the dull side of a knife or a fish scaler to scrape off the scales. It’s best to do this inside a sink or a large basin to prevent scales from scattering everywhere. Ensure all scales are thoroughly removed.

Make a cut along the belly of the sea bream. Starting near the anus and cutting towards the head, make a long incision. Once the belly is opened, carefully remove all the internal organs (guts). Scrape out any remaining blood or remnants to ensure a clean taste.
