Ingredients- 1 cup well-fermented Dongchimi (Korean radish water kimchi)
- 1/2 cup chilled Naengmyeon broth (buckwheat noodle soup broth)
- 2 Tbsp Hongcho (pomegranate vinegar or other fruit vinegar)
- Ice cubes, as needed
Cooking Instructions
Step 1
First, prepare your Dongchimi. Cut the radish from the Dongchimi into bite-sized pieces. It’s best to cut them into manageable pieces so they are easy to drink.
Step 2
Now, let’s mix the liquids that create the signature flavor of the Dongchimi Ade. Combine the Dongchimi brine, chilled Naengmyeon broth, and Hongcho in a 6:3:1 ratio. For example, use 6 parts Dongchimi brine, 3 parts Naengmyeon broth, and 1 part Hongcho (e.g., 180ml Dongchimi brine, 90ml Naengmyeon broth, 30ml Hongcho). This ratio creates a perfectly balanced sweet, sour, and refreshing taste.
Step 3
Fill your serving cup generously with ice cubes. Add the bite-sized Dongchimi radish pieces. Carefully pour the prepared liquid mixture over the ice and radish. Your refreshing Dongchimi Ade is now ready! It’s the perfect beverage to cut through richness or enjoy as a unique treat.
