  • 10 frozen dumplings
  • 2 eggs
  • 1/4 carrot
  • 1/2 green onion stalk
  • 1.5L broth (anchovy-kelp pack or store-bought broth)

First, let’s make the foundation for a delicious Tteok-Mandu-Guk: the broth. In a pot, combine 1.5L of water and a broth pack (containing anchovies, kelp, etc.). Bring to a boil over high heat, then reduce to medium-low and simmer gently for about 10 minutes to extract the flavors. Remove the broth pack – you now have a flavorful broth. (Using store-bought broth is also an option.)

Crack the eggs into a clean bowl and beat them thoroughly with a fork or whisk. Thinly slice the carrot or finely chop it. Slice the green onion stalk into bite-sized pieces. Preparing the vegetables beforehand will help speed up the cooking process.

Once the broth is boiling, add the prepared carrots and green onions. After the vegetables release their sweetness into the broth, add 2 tablespoons of soup soy sauce and 1 tablespoon of fish sauce for seasoning. Measuring with a rice spoon makes it convenient. Taste the broth and if it’s too bland, add a pinch of salt to adjust to your preference. Add 1 teaspoon of minced garlic at this stage as well.

When the soup comes to a rolling boil again, add the rice cakes and dumplings as desired. It’s helpful to rinse the rice cakes in cold water and separate them to prevent sticking and ensure they cook evenly. Cook until the rice cakes and dumplings float to the surface.

Once the rice cakes and dumplings are tender, slowly pour the beaten eggs in a thin stream around the edges of the pot.
