Main Ingredients- 150g thick wheat noodles (like Kal-guksu)
- Bok choy
- 50g minced beef
- A small amount of green onion
- 1 tsp minced garlic
- 1/2 tsp minced ginger (optional, for enhanced flavor)
Cooking Instructions
Step 1
First, let’s make the sauce that will define the flavor of your Dan Dan noodles. In a bowl, combine 4 tsp Doubanjiang, 1 Tbsp peanut butter (or peanut jam), 2 Tbsp soy sauce, and 2 tsp chili oil. Mix them well. This sauce base will add depth and richness to your noodles.
Step 2
Finely chop the green onion and set it aside. The aromatic green onion, when stir-fried with chili oil, will further enhance the overall flavor profile.
Step 3
Heat 1 Tbsp of chili oil in a pan over medium-low heat. Add the chopped green onion and stir-fry until fragrant. Be careful not to burn it; stir-frying until aromatic is key.
Step 4
Once the green onion is fragrant, add 1 tsp minced garlic and 1/2 tsp minced ginger (optional) and stir-fry briefly to release their aromas. Then, add the minced beef and cook until it’s no longer pink. Transfer the cooked beef to a separate bowl.

Wash the bok choy thoroughly. You can also cut it into bite-sized pieces if desired. The bok choy will be lightly blanched and used as a topping.

Bring a pot of water to a boil and add 150g of thick wheat noodles (like Kal-guksu). Cook them for about 1 minute longer than the package instructions suggest to achieve a wonderfully chewy texture. Rinse the cooked noodles in cold water to prevent them from sticking.

Pour 500ml of Sari Gomtang broth (or chicken stock) into a pot and bring it to a simmer. Once the broth is simmering, add a small portion of the pre-made sauce and taste to adjust the seasoning.

Add the stir-fried beef, minced garlic, and green onion back into the sauce mixture in the pot. Stir well to combine everything. Let the sauce simmer and meld with the broth.

Add more Doubanjiang and peanut butter to deepen the flavor and add creaminess. Taste the broth and adjust the seasoning with soy sauce as needed, according to your preference.
Step 10
Pour in the remaining Sari Gomtang broth and stir everything together. Let it simmer until the broth is heated through.
Step 11
Place the cooked noodles in a serving bowl. Arrange the savory stir-fried beef and blanched bok choy on top. Ladle the hot broth over everything. Finally, sprinkle with ground peanuts for a delightful garnish. Your homemade Dan Dan noodles are ready to be enjoyed!
