- 1/2 Tbsp Minced garlic
- 1 Tbsp Rice wine or ginger wine
- 2 Tbsp Oligosaccharide or corn syrup
- 200ml Water
- A little Sesame oil
- A little Sesame seeds
- 2 Tbsp Soy sauce
- 1 tsp Oyster sauce (if unavailable, add 1/2 Tbsp more soy sauce)
- 1/2 Tbsp Minced garlic
- 1 Tbsp Rice wine or ginger wine
- 2 Tbsp Oligosaccharide or corn syrup
- 200ml Water
- A little Sesame oil
- A little Sesame seeds
Cooking Instructions
Step 1
Slice the plump Vienna sausages diagonally in half to create attractive shapes. This helps them absorb the sauce better.
Step 2
Cut the rod-shaped fish cakes into bite-sized pieces. Typically, cutting them diagonally into 4 pieces makes them easy to handle and eat.
Step 3
Measure out 2 Tbsp of soy sauce and 1 tsp of oyster sauce. If you don’t have oyster sauce, add an extra 1/2 Tbsp of soy sauce to enhance the umami flavor.
Step 4
In a bowl, combine 1/2 Tbsp minced garlic, 1 Tbsp rice wine (or ginger wine), 2 Tbsp oligosaccharide (or corn syrup), and 200ml of water. Whisk well until smooth to create the braising sauce.
Step 5
In a pot or pan with a thick bottom, add the cut fish cakes and sausages. Slice the Korean chili pepper in half (remove the stem, omit or adjust quantity if you prefer less spice) and add it. Pour all the prepared sauce over the ingredients.
Step 6
Turn the heat to ‘high’ and bring to a boil. Simmering on high heat initially helps the sauce penetrate the ingredients quickly.
Step 7
Once boiling, reduce the heat to medium-low. Stir occasionally, flipping the ingredients to prevent sticking and ensure even cooking. Continue to braise until the sauce has reduced and is slightly visible at the bottom of the pan, concentrating the flavors for a richer taste.
Step 8
When the sauce has reduced to your liking, turn off the heat. Drizzle a little sesame oil and sprinkle with sesame seeds, then gently mix to finish. The addition of savory sesame oil and seeds enhances the overall flavor of the braised fish cakes and sausages.
