Gizzard Preparation & Marination

  • 1 cup All-Purpose Flour (for cleaning gizzards)
  • Water (for rinsing flour)
  • 2 Tbsp Mirin (rice wine)
  • 1 tsp Salt
  • A pinch of Black Pepper

Stir-Frying Seasoning & Cooking

  • 2 Tbsp Cooking Oil
  • 1.5 Tbsp Minced Garlic
  • A pinch of Salt (to adjust taste)
  • A pinch of Black Pepper (for finishing)
  • 1/2 Tbsp Sesame Oil

Rinse the chicken gizzards under running water to remove any debris. Then, add 1 cup of all-purpose flour and rub them vigorously. The flour helps to absorb impurities and any gamey odor. Rinse thoroughly until the water runs clear, and then drain them completely in a colander. Ensure they are well-drained to prevent oil splattering during cooking.
