Pancake Batter Ingredients

  • 60g Oatmeal
  • 2 Fresh Eggs
  • 1 Tbsp Melted Unsalted Butter
  • 200ml Soy Milk (or Milk)
  • 1 Ripe Banana
  • 2-3 Pinches Fine Salt
  • 1 Tbsp Honey (for batter)
  • A little Cooking Oil (for greasing pan)

Sweet Topping Ingredients

  • 1 Fresh Banana
  • A handful of Seasonal Strawberries or Blueberries
  • 2 Tbsp Honey (for topping)
  • 10 Almonds (chopped)

Cooking Instructions

Step 1

First, crack 2 fresh eggs into a bowl and whisk them gently with a whisk until smooth. Ensure the egg whites and yolks are well combined, without any stringy bits.

Step 1

Step 2

Add 60g of nutritious oatmeal and 200ml of smooth soy milk to the whisked eggs. Pour in 1 tablespoon of melted butter for added richness and 2-3 pinches of fine salt to balance the flavors. Mix everything together well.

Step 2

Step 3

Mash 1 ripe banana thoroughly with a fork until it has a smooth consistency with no lumps. Add the mashed banana to the batter and stir with a spatula or whisk until all ingredients are evenly incorporated. The banana will make the batter extra moist and tender.

Step 3

Step 4

Heat a non-stick pan over medium-low heat. Lightly grease the pan with a little cooking oil and wipe it with a paper towel to create a thin coating. Pour one ladleful of batter onto the pan. Gently swirl the pan to spread the batter into a round shape of your desired size. Aim for a moderate thickness for the best texture.

Step 4

Step 5

Once the bottom side is golden brown and small bubbles start to appear on the surface, carefully flip the pancake using a spatula or tongs. Cook the other side until it’s also evenly golden brown. You’ll know it’s ready to flip when it feels slightly firm if gently pressed with the spatula.

Step 5

Step 6

Arrange the beautifully cooked pancakes on a plate. Now, prepare your toppings. Finely chop the 10 almonds using a knife or a chopper. Sprinkle the chopped almonds over the pancakes, then drizzle about 1/2 tablespoon of honey for topping. Arrange sliced fresh banana and a few seasonal strawberries or blueberries for a colorful and appetizing finish.

Step 6

Step 7

Enjoy your healthy and delicious oatmeal pancakes with a warm cup of coffee, fresh fruit juice, or a glass of cold milk! It’s a wonderful brunch option that nourishes your body while delighting your taste buds. Enjoy your meal!
