Easy Rice Cooker Eel Bone Seaweed Soup
Don’t discard the eel bones left after preparing grilled eel! The rich, savory flavor that comes from the eel bones and remaining meat makes this seaweed soup exceptionally delicious, far beyond a typical version. Using a rice cooker allows anyone to easily and conveniently prepare this flavorful soup without complicated steps. The bones offer a fun texture, and its high nutritional value makes it a satisfying meal.
Main Ingredients- 1 Tbsp dried seaweed, cut (soaked)
- 150g eel bones (after removing meat for grilling)
- 2 shiitake mushrooms (soaked and sliced)
Cooking Instructions
Step 1
First, soak 1 tablespoon of dried seaweed in lukewarm water for about 10 minutes. Rinse it thoroughly to remove any impurities, squeeze out excess water, and cut it into bite-sized pieces. Also, rehydrate the shiitake mushrooms in lukewarm water, remove the tough stems, and slice them. Now, place the 150g of eel bones (with any remaining meat) and the prepared shiitake mushrooms into the inner pot of your rice cooker.
Step 2
Next, add the soaked seaweed (1 Tbsp), garlic powder (1 tsp), dried anchovy powder (1 Tbsp), and soy sauce for soup (1 Tbsp). Finally, carefully pour 300ml of hot water, freshly boiled in a kettle, directly into the rice cooker. Stir everything well with a spatula or spoon to ensure all ingredients are evenly combined.
Step 3
Select the ‘Reheat’ function on your rice cooker and cook for approximately 9 minutes. Depending on your rice cooker model, you might be able to use the ‘Keep Warm’ or ‘Cook’ settings. The cooking time may vary slightly based on the ingredients and the performance of your rice cooker.
Step 4
Once the cooking cycle is complete, open the rice cooker lid. You’ll notice a delicious aroma as the flavorful oil from the eel bones and meat has rendered into the broth, creating a rich and savory eel and seaweed soup.
