Even if you can’t grow your own, here’s a recipe to enjoy the deliciousness of grapes in their purest form: 100% grape juice concentrate. This year, instead of farming grapes, I decided to enjoy their natural taste without pesticides or fertilizers. However, this unexpectedly led to insect damage, reducing the harvest. But, this also means we get to enjoy even more precious and healthy grapes!

Gently wash the fresh grapes under running water two to three times. Then, soak the grape bunches in water mixed with 2 tablespoons of vinegar for about 10 minutes. This effectively removes any residual pesticides or impurities. After soaking, drain the grapes thoroughly in a colander.

Once the grapes are drained, separate them into individual berries from the stems. This step ensures that the grapes cook more evenly.

Place all the prepared grapes into a pressure cooker and close the lid. While cooking grapes in a regular pot requires constant stirring and takes a long time, using a pressure cooker makes the process much faster and simpler. Once the pressure cooker’s whistle starts, continue to cook for an additional 5 minutes, then turn off the heat and wait until the steam has completely escaped.

Once the pressure has fully released, open the pressure cooker lid. You’ll find the grapes are soft and well-cooked. Now, place a sieve over a bowl and, using a spatula, gently press the grapes to extract the clear juice concentrate. The skins and seeds will be naturally separated.

Continue pressing the grapes with the spatula to extract as much juice as possible. At the end, you’ll be left with only a small amount of leftover skins and seeds. The key is to extract every last drop of juice.
