Shishito Pepper and Tofu Braised Dishes Made with All-Purpose Soy Sauce: Perfect Side Dishes
When making my all-purpose soy sauce, I whipped up two essential side dishes in a single day. My husband loves them so much he could eat them every day of the year: braised shishito peppers and braised tofu, both made with my homemade all-purpose soy sauce. Let me show you how easy it is!

Cooking Instructions
Step 1
First, let’s make the all-purpose soy sauce. In a pot, combine 3 cups of ground pork, 6 cups of soy sauce, and 1 cup of sugar.
Step 2
Stir well with a spatula or spoon to break up any clumps of ground pork. Since it’s ground meat, it will cook quickly.
Step 3
As the mixture comes to a boil and starts to foam, keep a close eye on it. If you look away for even a moment, it can boil over and make a mess on your stovetop! Once it boils and foams, skim off the foam, turn off the heat, and let it cool down.
Step 4
Once the all-purpose soy sauce has cooled completely, transfer it to a clean bottle and store it in the refrigerator. It will last for a long time! Now, let’s use this flavorful sauce to make some delicious side dishes.
Step 5
Wash the shishito peppers thoroughly under running water. Remove the stems and cut them in half lengthwise. If they are very long, you can cut them into 2-3 pieces. If you like a bit of spice, thinly slice one Korean chili pepper.
Step 6
Lightly grease a heated pan with cooking oil. Add the prepared shishito peppers and stir-fry over medium heat until they start to soften slightly. Then, pour in 1 ladle of the all-purpose soy sauce and 1 ladle of water, using the same measurement.
Step 7
I personally prefer my shishito peppers to be tender rather than crisp, so I cooked them a bit longer. Made with the all-purpose soy sauce, this braised shishito pepper dish is incredibly flavorful and a perfect accompaniment to rice!
Step 8
Now, let’s prepare the braised tofu. Arrange the sliced tofu pieces attractively in a pot or pan. Add 1 tablespoon of minced garlic, 1.5 tablespoons of gochugaru (Korean chili flakes), 1 ladle of the all-purpose soy sauce, and 1 ladle of water. Finally, garnish with the chopped green onion.
Step 9
With all the ingredients in the pot, all you need to do is simmer over medium-low heat until the flavors meld and the sauce thickens slightly. This method is incredibly convenient, as you don’t need to prepare a separate seasoning mix. Delicious braised tofu is ready in a flash! It’s sure to make you finish your rice bowl quickly!
