Introducing these incredibly nutritious pumpkin rice twist doughnuts, perfect as a healthy snack for children. Made with pumpkin powder, they are wonderfully flavorful and absolutely delicious when freshly fried. Try making them at home!
Dough Ingredients- 150g Strong Rice Flour
- 30g Cake Flour
- 20g Pumpkin Powder
- 100g Warm Milk
- 1/2 Egg
- 2g Salt
- 20g Sugar
- 25g Unsalted Butter, softened
- Vegetable Oil, for frying
- 4g Instant Dry Yeast
Finishing- Unrefined Sorghum Sugar (Muscovado sugar) for coating

Cooking Instructions
Step 1
In a stand mixer bowl, combine the rice flour, cake flour, pumpkin powder, salt, sugar, instant dry yeast, milk, and egg. Mix until a dough forms. Add the softened butter and continue to knead until the dough becomes smooth and elastic (about 10-15 minutes).
Step 2
Divide the dough into 40g portions and roll them into balls. Let them rest for about 15 minutes for a short proof (this is a resting period before the second proof). (Tip: Rice flour doughs often don’t require a primary fermentation like wheat doughs. If you were using wheat flour, you would typically do a primary fermentation for about 50 minutes, or until the dough doubles or 2.5 times in volume.)
Step 3
Gently stretch each rested dough ball into a long strip, about 25-30cm in length. Fold the strip in half lengthwise, then twist it to create the classic doughnut twist shape. Ensure it’s not too thin.
Step 4
Arrange the twisted dough pieces on a baking sheet with some space between them. Let them undergo a second proof for about 15-20 minutes. They should puff up slightly.
Step 5
After the second proof, let the surface of the doughnuts dry slightly for a moment. Then, carefully fry them in oil preheated to 180°C (350°F) until golden brown and cooked through. (Tip for checking oil temperature: Insert a chopstick into the oil; if small bubbles form around it and rise steadily, the oil is ready.) Place the fried doughnuts on paper towels to drain excess oil.
Step 6
While still warm, coat the fried pumpkin rice twists with unrefined sorghum sugar. Your delicious and wholesome pumpkin rice twists are now ready to enjoy!
