Winter spinach, in particular, has a wonderful sweetness that makes it a fantastic side dish even with minimal seasoning. Main Ingredients- 200g fresh spinach
- 1 Tbsp coarse sea salt (for blanching)
Seasoning & Others- 1/2 Tbsp soy sauce or fish sauce

Cooking Instructions
Step 1
The soil was moist after the rain, making it easy to pull the spinach! It came straight from the garden with a little bit of soil still attached.

The spinach roots grew quite thick, absorbing nutrients throughout the winter! First, trim the spinach clean, and then gently split the root ends. This helps the seasoning penetrate better.

Bring a generous pot of water to a rolling boil, then add 1 Tbsp of coarse sea salt. Submerge the spinach roots first into the boiling water and blanch for about 10 seconds. Then, flip the spinach and blanch the leafy parts for another 10 seconds. It’s best not to overcook the spinach.

Immediately rinse the blanched spinach in cold water to stop the cooking and cool it down. After rinsing thoroughly, gently squeeze out excess water. Avoid squeezing too tightly, as this can diminish the tender texture of the spinach; leave a little moisture.

Prepare the green onion for seasoning by finely chopping only the white part. This adds a refreshing aroma to the dish.
