- 4 Strips of Gimbap Pickled Radish
- 1 Handful of Stone Parsley (Dolnamul)
Cooking Instructions
Step 1
Begin by trimming the stems from the shiitake mushrooms and lightly salting their undersides. Pan-sear them in a dry skillet until golden brown on both sides. Next, wash and prepare the carrot, bell peppers (red and yellow), zucchini, and cucumber. Julienne all these vegetables into uniformly thin strips. Heat 1 tablespoon of grapeseed oil in a wide pan over medium-high heat. Quickly stir-fry the julienned vegetables, either individually or together, until they are slightly tender but still retain a slight crispness. Season with a tiny pinch of salt. It’s important not to overcook them, preserving their fresh, crunchy texture.
Step 2
Cut the gimbap pickled radish into bite-sized pieces. Rinse the stone parsley under cold running water and gently pat it dry. Arrange the sautéed vegetables, sliced pickled radish, and drained stone parsley attractively on a serving platter. The vibrant array of colors will make the dish look even more appealing.

Now, let’s make the delicate wheat wrappers. In a bowl, whisk together the 100g of pancake mix and 200ml of water until smooth and lump-free. (Pancake mix usually contains seasoning, so extra salt isn’t typically needed. A good ratio is generally 1 cup pancake mix to 1 cup water for a smooth consistency.) Divide the batter into two separate bowls. To one bowl, stir in half a tablespoon of gochujang until well combined. This will give you both plain and gochujang-flavored wrappers. Heat a thin, wide non-stick pan over medium-low heat. Lightly grease it with grapeseed oil, then wipe off any excess with a paper towel to create a thin, even coating. Ladle about a tablespoon of batter onto the hot pan for each wrapper. Use the back of the ladle or a spoon to spread the batter as thinly and widely as possible, like making a thin crepe. Once the edges begin to lift slightly, the wrapper is ready – there’s no need to flip it.

As each wheat wrapper is cooked, place it on a paper towel-lined plate to absorb any excess oil. This helps keep them from becoming greasy. Once the excess oil is absorbed, carefully stack the finished wrappers on a clean plate, ensuring they don’t stick together. They are now ready to be filled and rolled.

To assemble the spring rolls, lightly blanch the reserved bunch of scallions (or use them raw if preferred). Lay a blanched scallion (or a small piece of plastic wrap if you want to ensure a super neat roll) on your work surface. Place a wheat wrapper on top. Generously fill the center with your choice of sautéed vegetables, pickled radish, and stone parsley. Fold in the left and right sides of the wrapper to enclose the filling, then roll it up tightly from the bottom. If using scallions, you can use them to tie the roll closed for a decorative touch and extra security.

Prepare a simple dipping sauce by combining finely chopped onion, chopped scallion, sesame oil, toasted sesame seeds, and a splash of vinegar in a small bowl. Mix well. Serve the completed vegetable spring rolls artfully arranged on a platter alongside the prepared dipping sauce.
