Brothy Tteokbokki: A Beloved Korean Comfort Food

Ingredients- 200g Rice tteokbokki cakes (use soft, fresh cakes for best results)
- 2 sheets Fish cakes (cut into bite-sized pieces)
- 1/2 Onion (thinly sliced)
- 500ml Broth (anchovy-daikon broth, rice water, or plain water)
- A little Green onion (chopped, for garnish)
Sauce Mix- 1 Tbsp Gochujang (Korean chili paste, slightly mashed for smoother texture)
- 2 Tbsp Gochugaru (Korean chili flakes, adjust to your spice preference)
- 2 Tbsp Soy sauce (regular or light soy sauce)
- 1 Tbsp Mirin (rice wine, helps remove odor and adds gloss)
- 1 Tbsp Sugar (adjust to your sweetness preference)
- 1 Tbsp Corn syrup or Oligosaccharide (for gloss and added sweetness)
- A little Sesame seeds (for garnish)
- 1 Tbsp Gochujang (Korean chili paste, slightly mashed for smoother texture)

Cooking Instructions

Begin by rinsing the rice tteokbokki cakes under cold water. If your rice cakes feel hard, soaking them in water for about 10 minutes will make them much softer and more pliable. Cut the fish cakes into your preferred shapes, such as triangles or strips. Slice the half onion thinly. Chop the green onion for garnish. In a small bowl, combine all the sauce ingredients (gochujang, gochugaru, soy sauce, mirin, sugar, and corn syrup) and mix them well. Having all your ingredients prepped beforehand makes the cooking process much smoother.
Step 2
In a wide pan or pot, pour in the 500ml of broth. Add about half of the prepared sauce mixture to the broth. Place the pan over medium heat and stir the sauce into the broth until it dissolves. Once the broth comes to a gentle boil, add the soaked rice cakes, the cut fish cakes, and the sliced onions. Stir occasionally to prevent the rice cakes from sticking together as they cook.
Step 3
When the rice cakes have softened about halfway and the sauce has started to thicken slightly (this should take about 5-7 minutes), add the remaining sauce mixture to the pan. Stir everything together well, ensuring the sauce evenly coats the rice cakes, fish cakes, and onions. Continue to simmer for another 3-5 minutes, or until the rice cakes are fully cooked and the sauce has reached your desired consistency. Finally, stir in the chopped green onions and simmer for a minute more. The fresh aroma of the green onions will enhance the broth’s flavor.
