Basic Ingredients- 40g cake flour (or all-purpose flour)
- 100g dark chocolate
- 80g unsalted butter
- 3 fresh eggs
- 1 teaspoon baking powder
- 2 packets cocoa powder (or hot chocolate mix)
- 3 tablespoons granulated sugar

Step 1
In a bowl, combine the dark chocolate (100g), unsalted butter (80g), and granulated sugar (3 tablespoons). Place the bowl over a pot of simmering water (double boiler method) and gently melt the ingredients over medium heat for about 8 to 10 minutes, stirring occasionally. Be careful not to overheat or scorch the chocolate.

In a separate bowl, crack the 3 fresh eggs and whisk them lightly. Gradually pour the melted chocolate mixture into the beaten eggs while whisking continuously until well combined. Mixing while the chocolate is still warm helps to create a smooth batter.

Now, let’s add the dry ingredients. Sift the cake flour (40g) into the batter. Sifting prevents lumps and contributes to a finer texture.
