Stew Ingredients

  • 1 Squid (adjust size as needed)
  • 1/2 Onion
  • 1/2 Scallion (Green Onion)

Spicy Seasoning Mix

  • 2 Tbsp Gochujang (Korean chili paste, generously)
  • 2 Tbsp Sugar
  • 0.5 Tbsp Guk-ganjang (Korean soup soy sauce)
  • 0.5 Tbsp Dasida (MSG-based seasoning, optional)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Garlic

Cooking Instructions

First, prepare your vegetables. Thinly slice the onion into strips. Chop the scallions into generous pieces; their fragrant aroma will enhance the stew’s flavor.

Rinse the fresh squid thoroughly under running water and remove its outer skin. Make shallow crisscross cuts on the inside surface; this helps the seasoning penetrate better, making the squid more flavorful. Cut the squid into bite-sized pieces.

Pour an appropriate amount of water into a pot and dissolve 2 tablespoons of gochujang completely. Once the water begins to boil, add all the prepared squid, onions, and scallions. Let everything simmer together.

At this stage, you can optionally add mushroom powder for an extra layer of umami, but the stew will be delicious even without it. Mix in the seasoning ingredients: 2 Tbsp gochujang, 2 Tbsp sugar, 1 Tbsp minced garlic, 0.5 Tbsp guk-ganjang, 1 Tbsp gochugaru, and 0.5 Tbsp Dasida. Adjust the seasoning to your preference. Continue to boil until the onions become translucent and all the ingredients are well combined. Your delicious and spicy Ojingeo Jjigae is ready!
