Sumi’s Side Dish Style! Pork and Potato Stew with Abundant Potatoes for Ultimate Flavor (Beware of Hot Mouthfuls, a True Rice Thief!)
Today, we’re making a delicious pork and potato stew, simmered to a thick, rich consistency. Be careful, it’s very hot! This dish is a fantastic ‘rice thief’ that will have you reaching for seconds.
Main Ingredients- 200g Pork shoulder (front leg)
- 3 leaves Aged napa cabbage kimchi
- 1/2 Potato
- 1/2 Onion
- 1/4 Zucchini
- 1/4 Green onion
Cooking Instructions
Step 1
First, prepare the vegetables and kimchi for the stew. Slice the green onion diagonally. Cut the potato, onion, and zucchini into bite-sized pieces. Drain excess juice from the kimchi and chop it into manageable pieces.
Step 2
Season the pork shoulder with a pinch of black pepper. This helps remove any gamey odor and enhances the overall flavor of the pork.
Step 3
In a ttukbaegi (earthenware pot) or a regular pot, combine the chopped kimchi, 2 ladles of kimchi brine, and 250ml of water. This forms the flavorful base of the stew.
Step 4
Place the pot on the stove over medium heat and bring to a simmer. While it’s heating up, stir in the minced garlic, minced ginger, soy sauce, and oligodang. Make sure the seasonings are well combined and prevent them from burning by keeping the heat moderate.
Step 5
Once the broth is boiling, add the cubed potatoes and the seasoned pork. Cover the pot and simmer over medium-low heat for about 10 minutes, or until the potatoes are tender and the pork is cooked through, and the stew has thickened slightly. Ensure the pork is fully cooked.
Step 6
When the potatoes and pork are mostly cooked, add the sliced zucchini and onion. Continue to simmer until the vegetables are tender but still have a slight bite. Avoid overcooking them.

Finally, add the chopped green onion and simmer for another 1-2 minutes, just enough to let the green onion’s aroma infuse into the stew. Your delicious Pork and Potato Stew is now ready! Serve it generously over a bowl of hot rice for a truly satisfying meal.
