Crispy and Delicious Napa Cabbage Pancakes (Baechujeon)

Main Ingredients- 1 head of young Napa cabbage
- 1 bowl of flour (using a rice bowl as a measure)
- 1 bowl of water (using a rice bowl as a measure)
- 1 Tbsp soy sauce (for the batter)
- Generous amount of cooking oil
Fantastic Dipping Sauce- 1 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp regular soy sauce (Jin-ganjang)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp red pepper flakes (Gochugaru)
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp chopped green onion
- 1 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp regular soy sauce (Jin-ganjang)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp red pepper flakes (Gochugaru)
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp chopped green onion
Cooking Instructions
Step 1
First, let’s make the batter for the cabbage pancakes. Using a rice bowl as a standard measure, combine flour and water in a 1:1 ratio in a mixing bowl. (e.g., 1 bowl flour, 1 bowl water).
Step 2
Add 1 tablespoon of soy sauce to this batter and mix well until smooth, ensuring there are no lumps. Aim for a consistency that is neither too thin nor too thick.
Step 3
Carefully separate the young Napa cabbage leaves one by one. Wash them thoroughly under running water. It’s important to pat them dry completely with paper towels afterwards. For the thicker stem parts of the cabbage leaves, gently pound them with the back of a knife to tenderize them. This will help the pancakes hold their shape beautifully when cooking.
Step 4
Dip the dried cabbage leaves into the prepared flour batter, coating both sides evenly. Make sure the batter gets into all the nooks and crannies of the cabbage leaves.
Step 5
Now, heat a frying pan and add a generous amount of cooking oil. Once the oil is hot enough, place the batter-coated cabbage leaves in the pan. Cook over high heat, flipping once, until golden brown and crispy on both sides. Be sure to keep an eye on them to prevent burning.
Step 6

In a small bowl, combine 1 Tbsp soup soy sauce, 2 Tbsp regular soy sauce, 1/2 Tbsp minced garlic, 1/2 Tbsp red pepper flakes, 1 Tbsp sugar, 1 Tbsp vinegar, 1 Tbsp sesame oil, and 1 Tbsp chopped green onion. Mix everything well. This dipping sauce will enhance the flavors of your cabbage pancakes beautifully!
