Easy Egg Mayo Pita Bread Sandwich Made in a Rice Cooker

Pita Bread Dough Ingredients- 120g All-purpose flour (bread flour or all-purpose flour)
- 4 Tbsp Warm water (50ml)
- 4 Tbsp Warm milk (50ml)
- 2 Tbsp Olive oil
- 0.5 tsp Salt
- 2 tsp Sugar
- 1 tsp Dry yeast (refrigerated)
Cooking Instructions
Step 1
Prepare Eggs for Boiling: To prevent cracking, take cold eggs from the refrigerator about 30 minutes before cooking and let them come to room temperature.
Step 2
Start Pita Bread Dough: Mix 4 Tbsp warm milk (50ml) with 4 Tbsp boiling water (50ml). Let it cool down until it’s lukewarm – not hot, but comfortably warm to the touch.
Step 3
Activate Yeast: Add 1 tsp dry yeast, 2 tsp sugar, and 0.5 tsp salt to the lukewarm liquid. Stir gently. (Ensure your dry yeast is properly refrigerated.)

Add Oil: Stir in 2 Tbsp of olive oil until well combined.

Add Flour: Sift 120g of all-purpose flour (bread or all-purpose flour works) into the bowl. Mix with a spatula or your hands until no dry flour streaks remain.

Knead the Dough: Once the flour is mostly incorporated, start kneading by hand. If the dough is too stiff, add a tiny bit more olive oil. If it’s too sticky, add a little more flour. Aim for a smooth dough that is easy to handle and doesn’t stick excessively to your hands. A slightly softer, more hydrated dough will result in a more pliable pita bread that folds nicely.

First Rise: Place the kneaded dough in a lightly oiled bowl, cover with plastic wrap or a damp kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Boil Eggs in Rice Cooker: Place the room-temperature eggs in your rice cooker pot. Add enough water to fully cover the eggs. (For CUCKOO rice cooker) Select the ‘Multi-cook’ or ‘Steam’ function and cook for 15 minutes. After cooking, turn off the power immediately and let the eggs cool inside the rice cooker.

Cool and Peel Eggs: Once cooled slightly, transfer the boiled eggs to an ice bath or cold running water to stop the cooking and make peeling easier.

Separate Egg Whites and Yolks: Peel the cooled eggs completely. Carefully separate the whites from the yolks. You can make a small cut in the white to help split it if needed.

Mash the Yolks: Use a fork or spoon to mash the egg yolks into a fine consistency.

Chop Egg Whites: Finely chop the boiled egg whites. You can use a knife or a chopper. Add the chopped whites to the bowl with the mashed yolks.

Make Egg Mayo Mixture: Add 4 Tbsp mayonnaise, 1 tsp sugar, 0.25 tsp salt, and a pinch of black pepper to the egg yolk and white mixture. Stir until smooth and creamy. For extra flavor, consider adding a teaspoon of mustard or a tiny dab of wasabi.

Check Dough Rise: After 1 hour, your dough should have visibly risen and doubled in size.
