Main Ingredients- Spam (2/3 can, approx. 200g)
- 4 Fresh Eggs
- 1 cup Well-fermented Kimchi (approx. 150g)
- 2 bowls Warm Cooked Rice
Seasoning and Topping Ingredients- 1/2 Tbsp White Sugar
- 1/2 Tbsp Soy Sauce
- A little Chopped Green Onion (for garnish)
- Mayonnaise (generous amount, to taste)
- 1/2 Tbsp White Sugar
- 1/2 Tbsp Soy Sauce
- A little Chopped Green Onion (for garnish)
- Mayonnaise (generous amount, to taste)
Cooking Instructions
Step 1
First, cut the Spam into bite-sized cubes. Finely chop the green onions to be used as a garnish.
Step 2
Chop the well-fermented kimchi into manageable pieces using kitchen scissors. If the kimchi is too sour, you can add a pinch of sugar.
Step 3
Crack 4 fresh eggs into a bowl. Whisk them thoroughly with chopsticks or a fork until the yolks and whites are well combined, creating a smooth egg mixture. Ensure there are no lumps.
Step 4
Divide the warm cooked rice into two bowls, creating a base for your rice bowls. Warm rice helps the ingredients meld together better.
Step 5
Heat a frying pan over medium heat and add a generous amount of cooking oil. Pour in the whisked egg mixture. As the eggs begin to set, gently stir them with chopsticks to create soft scrambled eggs. Avoid overcooking; they should remain moist.
Step 6
Arrange the soft scrambled eggs around the edge of the rice in each bowl, creating a border rather than piling them in the center.
Step 7
In the same frying pan, add a little oil if needed. Add the cubed Spam and stir-fry until it’s golden brown and slightly crispy. Cook until the savory aroma of the Spam is released.
Step 8
Place the well-fried Spam into the center of the rice bowls, on top of the scrambled eggs.
Step 9
Using the remaining oil in the pan, add the chopped kimchi, 1/2 Tbsp sugar, and 1/2 Tbsp soy sauce. Stir-fry until the kimchi is softened and well coated with the seasoning.
Step 10
Spoon the seasoned stir-fried kimchi over the Spam. The sweet and sour flavor of the kimchi will create a fantastic harmony with the salty Spam.
Step 11
Now for the final touch! Drizzle mayonnaise generously over the top of the rice bowl in a zigzag pattern, according to your preference. Finally, sprinkle the chopped green onions over everything. Your delicious Baek Jong-won Spam Mayo Rice Bowl is now complete and ready to be enjoyed by everyone!
