First, thoroughly wash the main ingredients, potatoes and carrots. You can peel them or leave the skins on if you prefer. Julienne the potatoes and carrots into thin, uniform strips. It’s important to cut them thinly so they cook evenly and quickly. Peel the onion and julienne it to match the length and thickness of the potatoes and carrots.

Heat a wide frying pan or wok over medium heat. Add a little cooking oil, and then add the julienned potatoes first. Begin to stir-fry. Cook for about 3-5 minutes, or until the potatoes start to turn translucent. Stir occasionally to prevent them from sticking to the pan.

Once the potatoes are starting to cook, add the julienned carrots and continue to stir-fry them together. Carrots cook slightly faster than potatoes, so stir-fry them with the potatoes, allowing them to develop a beautiful color. Cook for another 2-3 minutes.
