Main Ingredients- 2 bags (420g) frozen shrimp fried rice
- 2 eggs
- 1 pinch of salt
- 3 Tbsp canola oil
- 8 sheets of plain (unseasoned) square Inari tofu pockets
- 3 Tbsp pickled radish (finely chopped)
Cooking Instructions
Step 1
Using store-bought frozen fried rice makes preparing these Inari pockets incredibly convenient. If you prefer to make your own fried rice from scratch, feel free to use leftover rice mixed with your favorite vegetables and proteins.
Step 2
Heat about 3 tablespoons of canola oil in a pan over medium-high heat. Add the frozen fried rice directly to the pan without thawing and stir-fry. Cooking it thoroughly until the rice grains are separate and fluffy is key to achieving the best texture. (Approx. 5-7 minutes)
Step 3
Crack 2 eggs into a bowl. Add a pinch of salt (about two pinches with chopsticks) and whisk well. Lightly oil a separate pan and pour in the egg mixture. When the eggs are about 70% cooked, gently stir them with a spatula or chopsticks to create scrambled eggs. Using a whisk can help make them extra fluffy.
Step 4
Transfer the stir-fried rice to a large bowl. Add the scrambled eggs and the 3 tablespoons of finely chopped pickled radish. Mix everything together gently until well combined. It’s best to let the fried rice cool slightly before filling the Inari pockets; this helps them maintain their shape.
Step 5
The Inari tofu pockets we are using today are plain and unseasoned. They are different from the pre-seasoned ones often used for traditional Inari sushi.
Step 6
Boil 500ml of water in a pot. Add the Inari tofu pockets and simmer for about 1-2 minutes until they puff up. Once cooked, quickly rinse the tofu pockets under cold water to remove any excess oil. Gently press them to drain any excess water, being careful not to break their shape. You can cut them into triangles or squares as desired.
Step 7
Carefully open one side of each Inari tofu pocket and generously stuff them with the prepared fried rice mixture. Your delicious Fried Rice Inari Pockets are now ready to be enjoyed! For an extra touch, you can sprinkle some toasted sesame seeds or seaweed flakes on top.
