Bibim Guksu Ingredients (1 Serving)- 1 serving of Somyeon noodles (about the size of a 500-won coin)
- 1-2 Tbsp All-purpose Bibim Guksu Sauce (adjust to taste)
- 1 Tbsp Sesame Oil
- 1 Tbsp Vinegar
- A little Cucumber (julienned)
- A little Lettuce (julienned)
- A little Crumbled Seaweed (Gim)
All-Purpose Bibim Guksu Sauce Ingredients (Generous Batch)- 1 paper cup Minced Green Onion
- 1 paper cup Minced Onion
- 1 paper cup Minced Pork (with some fat)
- 1 paper cup Sugar
- 1 paper cup Soy Sauce
- 1 can (approx. 250ml) Pear Drink
- 1 cup Fine Gochugaru (Korean chili powder) + 1/2 cup Coarse Gochugaru
- 1/2 cup Minced Garlic
- 1 paper cup Minced Green Onion
- 1 paper cup Minced Onion
- 1 paper cup Minced Pork (with some fat)
- 1 paper cup Sugar
- 1 paper cup Soy Sauce
- 1 can (approx. 250ml) Pear Drink
- 1 cup Fine Gochugaru (Korean chili powder) + 1/2 cup Coarse Gochugaru
- 1/2 cup Minced Garlic
Cooking Instructions
Step 1
First, prepare the ingredients for the sauce. Finely mince the green onions, onions, and pork. Using pork with a good amount of fat will significantly enhance the richness of the sauce. (Tip! The fattier the pork, the tastier the sauce!)
Step 2
Measure out the sauce ingredients. Using a paper cup as a standard: prepare 1 cup of minced green onion, 1 cup of minced onion, 1 cup of minced pork, 1 cup of sugar, 1 cup of soy sauce, and 1 can of pear drink. (Tip! Chef Baek typically uses a rice bowl for measurement, but here we’ll use half the amount measured by a paper cup. Therefore, only 1 out of 2 cans of pear drink is used.)
Step 3
Combine the prepared minced green onion, minced onion, minced pork, sugar, soy sauce, and pear drink in a pot and mix well.
Step 4
Place the pot with the sauce mixture over medium heat on the stove and bring it to a boil.
Step 5
Once the sauce starts boiling, skim off any foam that forms on the surface. This step helps create a cleaner and smoother sauce.
Step 6
Let the sauce simmer for about 10 to 15 minutes after it begins to boil. Once it thickens, turn off the heat and allow it to cool completely.
Step 7
To the completely cooled sauce, add 1 cup of fine gochugaru and 1/2 cup of coarse gochugaru.

Now, add 1/2 cup of minced garlic and stir everything together until well combined. (Tip! Adding vinegar or sesame oil directly to the sauce can cause them to evaporate quickly. It’s best to add them right before mixing the noodles to ensure their flavor is preserved.)

The finished sauce might look a bit dark on camera, but its taste is truly excellent!

Now it’s time to cook the somyeon noodles for one serving. Bring a generous amount of water to a boil.

Prepare about a 500-won coin-sized portion of somyeon noodles per person.

When the water reaches a rolling boil, spread out the noodles to prevent them from clumping and add them to the pot. As the noodles start to bubble up and overflow, pour in about half a paper cup of cold water. Repeat this process of adding cold water twice when the noodles bubble up again. (Tip! This method helps the noodles cook to a chewy and firm texture.)

Once the noodles are cooked, drain them in a colander. Rinse them thoroughly under cold running water to remove excess starch and cool them down. (Rinse them well, as if giving them a shower.)
Step 14
Let’s plate the noodles beautifully for an elegant Bibim Guksu presentation. Using your thumb and index finger, grasp the noodles as if making a loop. Then, twist and swirl them to form a neat mound on your serving plate.
Step 15
Prepare the toppings. Wash the cucumber and lettuce and julienne them thinly. For the crumbled seaweed (gim), place dried seaweed sheets in a plastic bag and crush them by hand until they are flaky. (Tip! Using ingredients you have on hand is a great way to go. If you don’t have seaweed, it’s still delicious without it.)

Arrange the plated noodles on your serving dish. Top with the julienned cucumber, lettuce, and crumbled seaweed. Add 1-2 tablespoons of the all-purpose Bibim Guksu sauce (adjust to your preference), 1 tablespoon of sesame oil, and 1 tablespoon of vinegar. Mix everything together and enjoy your delicious Bibim Guksu!

If the sauce seems too thick and difficult to mix, wear disposable gloves and gently mix the noodles with your hands. This will ensure everything is well combined and the flavors meld beautifully.
