Ingredients

  • 1 can corn (approx. 200g)
  • 4 slices cheddar cheese
  • 2.5 Tbsp mayonnaise
  • 1 Tbsp butter
  • 0.5 Tbsp sugar (adjust to taste)

First, drain the canned corn thoroughly. You can simply pour out the liquid or use a sieve. If using fresh corn, boil or steam it until tender, then cut the kernels off the cob.

In a bowl, combine the drained corn kernels, 2.5 tablespoons of mayonnaise, and 0.5 tablespoon of sugar. Mix well until everything is evenly coated. You can add more or less sugar depending on your preference for sweetness.

Melt 1 tablespoon of butter in a frying pan over medium heat. Once the butter is melted and fragrant, spread the corn mixture evenly across the bottom of the pan. The butter adds a wonderful richness.

Arrange the 4 slices of cheddar cheese on top of the corn mixture, covering it completely. Don’t be shy with the cheese; more cheese makes it even better!

Cover the frying pan with a lid and reduce the heat to low. Cook for about 3-5 minutes, or until the cheese is fully melted and the bottom of the corn is lightly golden and slightly crispy. Keep an eye on it to prevent burning. It’s ready when the cheese is gooey and melted!
