Ingredients for Quince Preserve- 2 quinces (approx. 666g)
- 650g sugar
- 50ml honey
- 2 tbsp baking soda
Cooking Instructions
Step 1
First, we’ll clean the quinces. Place the quinces in a bowl and add 1 tablespoon of baking soda generously. Soaking the quinces in this solution will help remove surface impurities.

Step 2
Remove the quinces from the baking soda water and rinse them thoroughly under running water several times. Washing them well ensures a clean taste without any unwanted flavors in your final preserve.

Step 3
Quinces have hard seeds and firm flesh, so preparation is key before slicing. Start by cutting each quince into four wedges and carefully removing the core and seeds with a knife. It’s best to remove the areas around the seeds thoroughly, as they can impart a bitter taste.

After removing the seeds, the quinces need to be thinly sliced. Slicing them by hand can be tough and time-consuming due to their firmness. Using a mandoline slicer will make the process much faster and ensure uniform slices, making it much more convenient.

After slicing both quinces, their total weight was 666g. We’ll use this weight to guide our sugar ratio. Generally, a 1:1 ratio of fruit to sugar is recommended for preserves.

Add 550g of sugar to the thinly sliced quinces. Next, pour in 50ml of honey. The honey will add an extra layer of flavor and a subtle sweetness to your quince preserve.

Mix the quinces with the sugar and honey thoroughly. Ensure that every slice is well-coated with sugar. This step is crucial for the sugar to dissolve properly and create a delicious preserve.

Instead of immediately transferring the sugared quinces to a jar, let them sit at room temperature for about 1 to 2 hours. This allows the sugar to start dissolving and the quinces to release some of their juices, which helps them meld together beautifully.

Prepare your glass jar by sterilizing it with boiling water or thoroughly washing and drying it. Carefully pack the quince and sugar mixture into the sterilized jar.

To finish, sprinkle the remaining 100g of sugar over the top layer of the quinces in the jar. Covering the top completely with sugar helps minimize contact with air, preventing spoilage and ensuring the preserve lasts longer.

Seal the jar tightly and let it mature at room temperature for one to two days. After this initial period, store it in the refrigerator. For the best flavor, wait at least two days before enjoying your quince tea. Simply mix a spoonful with hot water for a comforting and delicious drink.
