Main Ingredients

  • Pork neck bones for 2 servings (approx. 600-800g)
  • Well-fermented aged kimchi (Muk Eun Ji), 1/2 head (approx. 500g)
  • Prepared dried radish greens (Ugeoji), 300g
  • Potatoes, 3 medium
  • Onion, 1 medium
  • Cheongyang peppers, 2-3 (adjust to spice preference)
  • Perilla leaves (young shoots), 2 handfuls
  • Water, 1.5L
  • Leek roots, 1 handful (or 1 leek stalk)
  • Bay leaves, 4-5
  • Glass noodles, a small amount (optional)
  • Perilla seed powder, 2-3 Tbsp
  • Soju, 1 cup (for removing pork odor)

Seasoning Paste

  • Doenjang (soybean paste), 2 Tbsp
  • Gochujang (red chili paste), 1 Tbsp
  • Gochugaru (red chili flakes), 3 Tbsp
  • Guk-ganjang (soy sauce for soup), 2 Tbsp
  • Jin-ganjang (regular soy sauce), 3 Tbsp
  • Mirin (rice wine), 3 Tbsp
  • Minced garlic, 2 Tbsp
  • Ginger powder, 0.3 Tbsp (or 0.5 Tbsp minced ginger)
  • Sugar, 1 Tbsp
  • Black pepper, 0.5 Tbsp

Cooking Instructions

Soak Pork Neck Bones: Place the pork neck bones in a bowl of cold water. Add 2 Tbsp of sugar and let it soak for 2-3 hours to remove blood. Sugar helps draw out the blood faster. Rinse the bones thoroughly under running water once soaked. (Tip: Buying less than 1kg of bones for under 10,000 won is a great value!)

Prepare Seasoning Paste and Vegetables: In a separate bowl, combine 2 Tbsp doenjang, 1 Tbsp gochujang, 3 Tbsp gochugaru, 3 Tbsp jin-ganjang, 2 Tbsp guk-ganjang, 3 Tbsp mirin, 2 Tbsp minced garlic, 0.3 Tbsp ginger powder, 1 Tbsp sugar, and 0.5 Tbsp black pepper. Mix well to create the seasoning paste. Prepare the potatoes, onion, and other vegetables.

Parboil Pork Neck Bones: Fill a large pot with plenty of water and bring it to a boil. Once boiling, add the leek roots (or leek stalk), bay leaves, and 1 cup of soju.

Clean the Bones: Drain the parboiled bones and rinse them under clean running water to remove any remaining impurities and excess fat.
