Unlike traditional filled hotteok, this version is delicious even without a filling. This recipe utilizes readily available hotteok mix from the supermarket, making it incredibly simple for anyone to create this unique bread at home. Achieve ultimate crispiness with an air fryer, or enjoy a perfectly delicious outcome using a frying pan. Bonus: leftover dough can be used to make sweet, pan-fried hotteok! Essential Ingredients- 1 pack Hotteok Mix (including dough ingredients)
- 1 paper cup (approx. 180ml) warm water
Cooking Instructions
Step 1
In a large bowl, combine the yeast from the hotteok mix with the warm water (around 35-40°C or 95-104°F) and stir until the yeast is dissolved. Add the entire hotteok mix powder and mix with a spatula or your hands until a smooth dough forms, ensuring there are no dry lumps. If the dough feels too sticky, add a tiny bit of flour; if it’s too stiff, add water a little at a time until the right consistency is reached.
Step 2
Transfer the dough to a clean work surface and knead for about 5 minutes to develop a chewy texture. Divide the dough into desired portions (usually 2-3 pieces). Using a rolling pin or your hands, roll each portion as thinly as possible. The key to ‘Gonggalppang’ is thinness, so aim for a paper-thin consistency without tearing.
Step 3
Spread the filling mix (the sugar filling typically included in the hotteok mix) evenly over one of the thinly rolled dough circles, leaving about a 1cm border around the edges to prevent leakage. Carefully place another thinly rolled dough circle on top to cover the filling. Seal the edges tightly by pressing them together to ensure the filling stays inside.
Step 4
Use a round cookie cutter or the rim of a glass of the desired size to cut out the filled dough into circles. Gently press down on the edges with your fingers to neaten the shape for a more polished look.

① Air Fryer Method: Line the air fryer basket with parchment paper and place the shaped ‘Gonggalppang’ inside. Air fry at 200°C (392°F) for approximately 7 minutes. Adjust the time and temperature based on the thickness of your bread and your air fryer’s performance. They are ready when puffed up and golden brown. ② Pan-Fry Method: Lightly grease a frying pan with oil and heat over medium-low heat. Place the ‘Gonggalppang’ in the pan and cook for about 5-7 minutes, flipping occasionally until golden brown and crispy on both sides. Covering the pan can help ensure the inside is cooked through.
