Main Ingredients

  • 200g Salmon fillet
  • 2 cups soaked rice (approx. 360ml)
  • 2 cups water (approx. 360ml)
  • 2 pieces of dried kelp (5cm x 5cm)
  • 1 bunch of minari (water dropwort)

Pat the salmon fillet dry with paper towels. Season both sides lightly with salt and pepper. This step not only seasons the salmon but also helps remove any fishy odors and enhances its flavor.

Heat the cooking oil in a pan over medium heat. Place the seasoned salmon in the pan and sear both sides until golden brown and lightly crispy. The goal is to achieve a slightly crisp exterior while keeping the inside moist. Sear it carefully to maintain its shape for serving.

Now, let’s cook the rice. In a pot, combine 2 cups of rinsed rice and 2 cups of water (a 1:1 ratio is generally good). Place the 2 pieces of dried kelp on top of the rice. Adding kelp to the rice while cooking adds a wonderful umami depth.

Bring the water in the pot to a boil over high heat. Once it starts boiling, reduce the heat to low. When the water is simmering, arrange the pan-seared salmon pieces attractively on top of the rice. Drizzle 1 Tbsp of cooking wine around the salmon; this helps eliminate any remaining fishy smell and adds a subtle aroma. Cover the pot and let it simmer on low heat for 15 to 17 minutes.

While the rice is cooking, wash and trim the bunch of minari. Finely chop it into approximately 1cm pieces. The fresh, aromatic flavor of minari will complement the rice beautifully.

Once the cooking time is up, turn off the heat. Sprinkle the chopped minari evenly over the rice. Cover the pot again and let it steam for another 2 minutes. Your delicious Salmon Rice Pot is now ready! Gently mix the rice and salmon to avoid breaking the fish. For an extra flavor boost, serve with a side of soy sauce-based dipping sauce.
