We’re stuffing chewy cannelloni pasta tubes with gooey mozzarella cheese, wrapping them in rice paper for an extra crispy shell, and then frying them to golden perfection. Main Ingredients- 6 pieces Cannelloni pasta tubes
- 200g Mozzarella cheese (block)
- 6 sheets Rice paper wrappers
Cooking Instructions
Step 1
Begin by boiling the cannelloni pasta tubes in plenty of water. Cook them for just about 2 minutes, slightly less than the package instructions, as they will be fried later. The goal is to make them pliable but still have a slight bite. Once cooked, drain them and rinse briefly under cold water to prevent sticking.
Step 2
Cut the block of mozzarella cheese into pieces that are roughly the same length as your cannelloni tubes. This will ensure a good fit and maximum cheesy goodness inside each stick.

Carefully insert the cut mozzarella cheese into each cooked cannelloni tube. Don’t force it; you want a snug fit. Once the cheese is inside, lightly coat the outside of the cannelloni with all-purpose flour. Next, prepare your rice paper wrappers by dipping them quickly in warm water until they are pliable but not overly soggy. Place a floured cannelloni tube onto a softened rice paper wrapper and roll it up tightly, ensuring the cheese is sealed inside. You can dampen the edges of the rice paper slightly to help them stick and seal the roll.

Heat about 2-3 inches of vegetable oil in a deep pot or wok to 175°C (350°F). You can test the oil temperature by dropping a tiny piece of rice paper wrapper; it should sizzle and puff up immediately. Carefully lower the wrapped cannelloni cheese sticks into the hot oil, frying in batches to avoid overcrowding the pot. Fry for about 3-4 minutes, or until they are golden brown and crispy. Remove the fried cheese sticks with a slotted spoon and place them on a wire rack or paper towels to drain any excess oil. Serve immediately while the cheese is molten and stretchy.
