Main Ingredients- Pork rinds 500g
- 1 Onion
- 1 bunch Scallions
- 1 Cheongyang pepper (optional, for a spicier taste)
For Boiling Pork Rinds (to remove gamey smell)- 2 Bay leaves
- 1 tsp Ginger powder
- 4 cloves Garlic
- 1/2 tsp Salt
- Pinch of Black pepper
Seasoning Sauce Ingredients- 3 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Gochujang (Korean chili paste)
- 4 Tbsp Soy sauce
- 1.5 Tbsp Minced garlic
- 2 Tbsp Oligodang (corn syrup)
- 1 Tbsp Sugar
- 1 Tbsp Sesame oil
- 2 Tbsp Oyster sauce
- 2 Bay leaves
- 1 tsp Ginger powder
- 4 cloves Garlic
- 1/2 tsp Salt
- Pinch of Black pepper
Seasoning Sauce Ingredients- 3 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Gochujang (Korean chili paste)
- 4 Tbsp Soy sauce
- 1.5 Tbsp Minced garlic
- 2 Tbsp Oligodang (corn syrup)
- 1 Tbsp Sugar
- 1 Tbsp Sesame oil
- 2 Tbsp Oyster sauce
Cooking Instructions
Step 1
In a pot, add enough water to cover the pork rinds. Add bay leaves, ginger powder, 4 cloves of garlic, 1/2 tsp salt, and a pinch of black pepper to prepare for boiling and removing any gamey smell.
Step 2
Once the water starts boiling vigorously, add the pork rinds and boil. Be mindful of the heat to prevent the water from boiling over; start on high heat and then reduce to medium-low once it boils.
Step 3
Boil the pork rinds for about 20 minutes to achieve a tender yet chewy texture. The boiling time can be adjusted based on the thickness and condition of the pork rinds.
Step 4
After boiling for 20 minutes, rinse the pork rinds under cold water to remove any impurities. Drain them in a colander and let them cool slightly.
Step 5
While the pork rinds are cooling, let’s make the delicious seasoning sauce! In a bowl, combine 3 Tbsp gochugaru, 1.5 Tbsp gochujang, 4 Tbsp soy sauce, 1.5 Tbsp minced garlic, 2 Tbsp oligodang, 1 Tbsp sugar, 1 Tbsp sesame oil, and 2 Tbsp oyster sauce. Mix well until thoroughly combined.
Step 6
Once the pork rinds have cooled down a bit, cut them into bite-sized pieces. They are easier to cut when they are just cool enough to handle, not completely cold.
Step 7
Heat a generous amount of cooking oil in a large pan over medium heat. Add the sliced onion and stir-fry until it becomes translucent, releasing its aroma.
Step 8
Once the onion is somewhat softened, add the prepared pork rinds to the pan and stir-fry together. Keep stirring to prevent the pork rinds from sticking to the pan.
Step 9
When the pork rinds are slightly cooked, pour in all the prepared seasoning sauce. Stir well to coat the pork rinds evenly with the sauce, and continue to cook until the sauce thickens and becomes sticky.
Step 10
Once the sauce has beautifully coated the pork rinds and has thickened, add the sliced scallions and Cheongyang pepper (if using). Stir-fry briefly for a final touch. Your spicy, sweet, and chewy stir-fried pork rinds are now ready to be enjoyed! Turn off the heat and savor this delightful dish.
