Main Ingredients- Konjac noodles 200g
- Salad greens 100g
Seasoning Ingredients- Gochujang (Korean chili paste) 1 Tbsp
- Soy sauce 1 Tbsp
- Sugar 1 Tbsp
- Gochugaru (Korean chili flakes) 1 tsp
- Plum extract 1 Tbsp
- Apple cider vinegar 1/2 Tbsp
- Sesame oil 1 Tbsp
- Sesame seeds (for garnish)
Blanching Konjac Noodles- Vinegar 1 Tbsp

Cooking Instructions
Step 1
First, prepare the Bibim Guksu sauce according to the ingredient list. Making it in advance allows the flavors to meld and deepen, resulting in a more delicious taste.

For the vegetables in this Bibim Guksu, I’ve chosen fresh salad greens. Feel free to add plenty of your favorite vegetables!

Instead of regular somen noodles, we’ll be using konjac noodles for a lighter texture.

Carefully open the konjac noodle packaging and rinse them under running water.

Bring a pot of water to a rolling boil.

To eliminate any inherent konjac odor, it’s best to blanch the noodles in boiling water with 1 tablespoon of vinegar for about 20 seconds. This step ensures a clean flavor.

After blanching, immediately rinse the konjac noodles under cold water to cool them down. Drain them thoroughly in a colander and then transfer them to a large bowl.

Pour the prepared delicious sauce generously over the konjac noodles.

Put on disposable gloves and gently toss the noodles with the sauce until well combined. Be careful not to overmix, as this can break the delicate konjac noodles.
