Easy Crab Stick and Egg Stir-fry Recipe: A Nutritious Dish Perfect for Breakfast or Dinner
I often make this simple crab stick and egg stir-fry, which is light and satisfying for both breakfast and dinner. It’s a versatile dish that pairs well with rice and offers a delightful combination of textures and flavors.
Ingredients- 2 crab sticks (approx. 70g)
- 2 large eggs
- 20g green onion (scallion)
- 5g chives (optional)
- 1-2 pinches of salt
- 2 tbsp olive oil
- A pinch of black pepper
- A sprinkle of toasted sesame seeds
Cooking Instructions
Step 1
Begin by preparing your aromatics and vegetables. Wash the chives thoroughly under running water and cut them into approximately 4cm lengths. Finely chop the green onion, including both the white and green parts.
Step 2
Unwrap the crab sticks. Wearing disposable gloves, gently shred the crab sticks lengthwise into bite-sized pieces. Crack the two eggs into a separate bowl.
Step 3
Heat a skillet or wok over medium heat. Add the chopped green onions and 2 tablespoons of olive oil to the pan.

Sauté the green onions until they become fragrant and slightly softened, releasing their delicious aroma. This process creates a flavorful ‘green onion oil’ which will infuse the dish. Be careful not to burn them.

Once the green onions are aromatic, add the shredded crab sticks to the pan. Stir-fry for about 1-2 minutes until the crab sticks are heated through and softened.

Push the crab stick mixture to one side of the pan. Crack the two eggs into the empty space. Sprinkle 1-2 pinches of salt directly over the eggs. (Since crab sticks can be slightly salty, it’s best to lightly season only the eggs.)

Before the eggs fully set, use a spoon or spatula to gently stir and scramble them. Break up any large curds to create a soft, fluffy scrambled egg texture.

When the eggs are about 60-70% cooked – still slightly moist – turn off the heat. The residual heat from the pan will continue to cook the eggs, ensuring they remain tender and creamy, not dry.

With the heat turned off, gently combine the scrambled eggs with the crab stick mixture. Fold them together carefully to avoid breaking up the eggs too much.

Add the chopped chives (if using) to the pan and stir them into the mixture. (Chives are optional and add a fresh, mild onion flavor and color. They cook very quickly, so just toss them in the residual heat or over very low heat for a minute to retain their slight crispness.)

Sprinkle a pinch of black pepper over the stir-fry to enhance the flavors. Gently mix everything together once more.
