Main Ingredients

  • 4 sheets of square fish cakes
  • 1 small onion
  • 1/2 carrot
  • 1 stalk of green onion (scallion)
  • 2-3 Tbsp grapeseed oil

Seasoning

  • 1 Tbsp gochugaru (Korean chili powder)
  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1/2 Tbsp minced garlic
  • 1 Tbsp cooking wine (mirin or similar)
  • 1 Tbsp water
  • 1 Tbsp corn syrup (or rice syrup/oligosaccharide)
  • 1/2 Tbsp sesame oil
  • 1/2 Tbsp toasted sesame seeds

Cooking Instructions

Cut the square fish cakes into long, rectangular strips, slightly wider than usual. Briefly blanch them in boiling water for about 10 seconds to remove excess oil and make them tender. Drain the blanched fish cakes and rinse them under cold water, then set aside to drain.

Slice the onion into thick strips. Cut the carrot into long, flat pieces. Chop the green onion into lengths similar to the fish cakes to complement the overall presentation.

In a small bowl, combine all the seasoning ingredients (gochugaru, soy sauce, oyster sauce, minced garlic, cooking wine, water, and corn syrup). Stir well until the sugar dissolves to create a smooth sauce. Oyster sauce, made from fermented oysters, adds a deep umami flavor when incorporated into Korean dishes.

Heat 1 Tbsp of grapeseed oil in a pan over medium-low heat. Add the minced garlic and stir-fry until fragrant and lightly golden, being careful not to burn it. Add the carrot, the hardest vegetable, and stir-fry for about 2 minutes until it starts to soften. Then, add the blanched fish cakes and stir-fry, followed by the onions. Cook until the onions become translucent.

Once the vegetables are somewhat cooked, pour in the prepared seasoning sauce and stir-fry everything together for 2-3 minutes, ensuring the sauce coats all the ingredients evenly. Finally, add the chopped green onions and stir-fry for another moment. Just before turning off the heat, drizzle in the sesame oil and sprinkle with toasted sesame seeds for a nutty aroma.
