You can make a truly delicious mixed noodle dish with just kimchi, even without special ingredients. Main Ingredients

  • Somen noodles for 2 servings
  • 1/2 cup well-fermented kimchi (finely chopped)
  • 2 eggs (for garnish)
  • A little toasted seaweed (for garnish)

Spicy & Sweet Sauce

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Corn syrup (or adjust sweetness)
  • 1 Tbsp Vinegar (or adjust sourness)
  • 1 Tbsp Soy sauce
  • 1 Tbsp Sesame oil
  • 1 Tbsp Toasted sesame seeds (crushed for enhanced flavor)

Cooking Instructions

First, prepare the toasted seaweed for garnish by cutting it into bite-sized pieces (thinly shredded or crumbled). You can also simply crumble it with your hands.

Boil the eggs for garnish. Place the eggs and cold water in a pot. Once the water starts boiling, cook for about 13 minutes for hard-boiled eggs. Immediately transferring the cooked eggs to cold water will make them easier to peel.

Prepare the kimchi, the star of this dish! Chop the kimchi as finely as possible. Using a knife is ideal, but if you’re in a hurry, cutting it with scissors is also fine. About 1/2 cup of chopped kimchi is a good amount.

In a bowl, combine the finely chopped kimchi with all the sauce ingredients: gochujang, gochugaru, corn syrup, vinegar, soy sauce, and toasted sesame seeds. Mix everything together by gently massaging it with your hands, ensuring the kimchi is well-coated with the seasoning.

It’s time to cook the somen noodles. In a large pot of boiling water, add the somen noodles. When the water starts to boil over, add about half a cup of cold water. Repeat this process 2-3 times, or cook according to the package instructions (usually 3-4 minutes). Stir the noodles occasionally to prevent them from sticking together.

Once the somen noodles are cooked, rinse them thoroughly under cold running water to remove excess starch and drain them completely. Rinsing with cold water helps to make the noodles springy and ensures the sauce adheres well.

Add the seasoned kimchi mixture to the drained noodles. Now, vigorously mix them together as if you’re tousling hair! It’s important to mix thoroughly so that the noodles and the kimchi seasoning are evenly combined. Make sure every strand of noodle is coated with the delicious sauce.
