Ingredients- 450g Tteokbokki rice cakes (refrigerated)
- 3 strips Bacon
- 2 Tbsp Corn kernels (canned)
- 1/4 Onion
- 1/4 Red bell pepper
- 1/4 Yellow bell pepper
- 100g Mozzarella cheese
- Pizza sauce, as needed
- Parsley flakes, for garnish
Cooking Instructions
Step 1
First, prepare the toppings for your pizza. Finely chop the bacon, onion, and bell peppers. Feel free to use any leftover vegetables you have in your fridge to add extra flavor and color.
Step 2
If your tteokbokki rice cakes are firm from refrigeration, blanch them in hot water for about 1-2 minutes until they soften slightly. Don’t overcook them; the goal is just to make them pliable.
Step 3
Once softened, drain the rice cakes and thread them onto skewers, about 3-4 pieces per skewer. Leave a little space between the cakes on the skewer.
Step 4
Line a baking sheet with parchment paper. Arrange the skewered rice cakes on the sheet and spread a generous layer of pizza sauce evenly over each one. You can also use a regular tomato sauce if preferred.
Step 5
Next, evenly distribute the chopped bacon over the pizza sauce on the rice cakes.
Step 6
Scatter the finely chopped vegetables and corn kernels over the bacon. Arrange them appealingly for a visually attractive pizza.
Step 7
Generously sprinkle mozzarella cheese over all the toppings, ensuring good coverage for that delicious cheesy pull.
Step 8
Bake in a preheated oven at 190°C (375°F) for about 10 minutes, or until the cheese is melted and golden brown. Alternatively, you can use an air fryer at 180°C (350°F) for 7-8 minutes.
Step 9
Once out of the oven, sprinkle with parsley flakes for a final touch. Serve immediately while hot to enjoy the wonderfully chewy and savory flavors!
